Restaurant Inspections

Over the last several months I've had a few individuals spontaneously bring restaurant inspections up in conversation. We've generally ended wondering if Howard County or Big Spring has a restaurant inspector. I have learned that Howard County and Big Spring likely do not have anyone that inspects restaurants, but that a state of Texas inspector does come to our area, perhaps less frequently than is desirable. Today I decided to start looking online for reports and scores at the state level, but I have been unable to find anything on a state website. I did find

though when I go to this website and search Big Spring, Texas, no reports are returned. It looks like no West Texas reports are available. I'd like to hear other opinions on the matter of whether or not restaurant inspection scores and reports should be made readily available online, whether Howard County and the City of Big Spring should contract with a professional inspector to inspect our restaurants, scoring using the state of Texas standards.

By the way, I am not suggesting or implying that I am aware of ANY restaurant in Big Spring or Howard County which is unsanitary, has received poor scores, or whatever. I honestly do not know. I do guess that 98% of the public would prefer to eat in a higher scoring restaurant, all other factors [food, atmosphere, friendly staff, etc.] being equal. What do you think?

I used to do pest control for resteraunts here and in midland and odessa. I can tell you that the most absolute disgusting kitchen I have ever seen belongs to a very properous eatery here in big spring. After seeing it I have never eaten at that business again.

Before I moved here, every restaurant I ate in had a score from the health inspector posted somewhere where it could be seen by the public

You are more than welcome to come into my kitchen any time you wish. Our floor may have trash on it do to our being busy and not having time yet to sweep. Point being, you can very easily tell if it is filth, or you have been busy and just haven't swept up. I like the fact that I allow people into my kitchen, I have nothing to hide. Just for the record, whomever said a prominent restaurant was not up to par better not be alluding to me. I have been blamed for waaaaay to many things since the smoking ordinance, and this is certainly not one of them. Cindy

AJ what made you bring this up? One more question from our mayor that he is trying to cause me more grief, trouble? I am reaaaaaallly tired of hearing all the misconceptions that has been attributed to his honor about myself and my establishment. And yes Russ I know you will deny everything, just like the thing with my mother being the owner and manager, at 86 years old. The odd thing with me is, no one has spoken to me, but I get all kinds of things attributed from my mouth that I did not personally say to anyone. We have worked hard to have the cleanest restaurant possible. Ask the health department about us. FKH3 Cindy.

May years ago when I was in high school, I washed dishes at Red Mesa. The place was spotless every night when we left...because it was expected.

Anyone who would indicate that Red Mesa is unkept, is as ignorant as some of the folks on this site.

I don't believe anyone has indicated and or implied that the kitchen mentioned was that of the red mesa. A little presumptuous and a tad egotistical on someomes part to equate the word "prosperous" to any single eatery in Big Spring. Or maybe it is just paranoia.

No, that kitchen was certainly not the Red Mesa. I have said on here many times that I happily eat at the Red Mesa.
Anyone who thinks I was alluding to that is ignorant or hoping to use my words to further their own agenda's.

Also 2020, I would call a business that has been open for years and that affords a person to live off the income brought from it prosperous.

Oh yeah, I never did pest control for the Red Mesa. Another reason why that was not about them.

It is unfortunate that I have become so paranoid. I am the most un presumptionate person you know. I just know that I have stuck my neck out with the Mayor and the City employees, I am a direct target with anyone, and have been so unfortunately. I wish we could speak our minds and not have it reflect on our business, however we all know that will never happen. I decided that I can speak out, but when I hear something, I am cautious that it probably is about me since I am a loud mouth. Thanks to everyone that does notice that we try to keep a clean place, it takes a lot of time and effort. Thanks for your support. Cindy

I believe Cindy would if she could. She has asked many times and is very correct in asking how does Brint Ryan expect to staff the settles?
Fact is that all retail establishments are looking for help. Drive down gregg street and you will see many signs looking for help.

I have heard tooo many unfounded rumors about my restaurant. That is why I was curious about AJ'S question. I have heard that the Mayor said I burnt his food on purpose, his secretary said she will only drink at my place but won't eat there because she doesn't know what I will do to her food, I guess, I can't do whatever it is to her drink, and I have been told that the city employees were told not to eat with me. I can tell you I have seen their trucks at Cowboys, and not at my place. Of course I can't prove any of the above, it's all conjecture, however, I find it interesting that the rumor mill keeps it going. I try too hard to run a clean business, I don't need the Mayor's help to keep people away, I wonder why he feels the need to dish me? Cindy

A.J. I know myself nor Russ had anything to do with this thread. My point is the mayor, according to the rumor mill, has spread things about my restaurant. I was just telling things I have heard. As I said, they may all be rumors. However, I have one thing Russ said about me that I know is factual, and it was incorrect, and he spun it as such as it wasn't his fault. This should not even be an issue, the mayor should be glad there are businesses in town that employ people and pay their taxes. I know, I know there was a mistake somewhere, he didn't do it, say it or mean it. I don't care anymore. The city council has more important things on their plate than trying to run a local business, especially trying to be negative about them. I ask you once again AJ call me, I have several things that might open your eyes. Anyone know anything about all the anonymous calls made about my business to certain entities. They can't even stand up and say who they are. You know who you are. At least I stand up for my rights. Cindy

I read the comments made on Restaurant Inspections,and didn't know whether to laugh or cry.
First all I've never seen anything to indicate the Red Mesa isn't very clean! I can't believe anyone would say other wise.
Then there's Yellow Dog, okay if you went home hungry that's no ones fault but your own. People are way to willing to blame others for their problems. Why did you not go to one of the waitresses and say what you told all of us instead of leaving in a huff.

I stay out of kitchens because I am not always 100% clean. I judge the cleanliness of the establishment by the rest rooms. I have found both those in the Red Mesas to be very clean and well stocked with suplies.
Since I am on no scheddule I can be very tolerant and understanding about short delays. If our city workers avoid the Red Mesa it is their loss.

Hey Cindy,

You really need to keep good records of when you have "enforcement visits" keep a video camera on hand to record what they are doing. And what they are supposedly finding.

You do that and they'll quickly stop visiting.

For my years growing up in town and working with folks who did work in many businesses, including restaurants here, I can tell you where I would eat and where I would not after seeing many of those kitchens 1st hand.

Red Mesa is one of the cleanest restaurants in town. I have no problem with Cindy's facility. She does an above board job of keeping her business ready for customers on all levels.

As far as the other restaurants go, I've seen folks wh o work in kitchens around town lick plates before serving food on them, I've been witness to some pick up dropped food and serve it to the customers and more. Although I find it dispicable, there is no way to control this behavior if the restaurant owners or managers won't do their jobs and monitor the activities of their employee's in their kitchens.

There is a chain restaurant here that is having major problems with employee's. In the last 3-4 months they got complained against and the manager lost their job as did several employee's and today, they are still having problems. I know that they were reported to their corporate offices for uncleanliness, employee's in the kitchen and at the counter, playing grab-a$$ instead of providing friendly and helpful service to customers and so on.

I know that waitresses / waiters don't make minimum wage, which in my opinion takes away the incentives to do a better job from management. However, this leads us into a new thread I will call "Can't Hire in Big Spring".

I dont agree with Cindy on a number of things, But all that aside she runs a very good resturant. The food is always good, fair prices and most of all its a clean place..
